No I'm not talking about Marinette with the cat miraculous. I mean that Ladybug and Chat Noir are together. Warning! This post contains spoilers for Chat Blanc!

It can be explained simply. It's called a time conundrum. When Bunnix was introduced in the episode TimeTagger it brought up a hard to explain subject.
What happens if you mess with time? Well that's really hard to explain. It's best described as a ripple effect. Imagine time as a big lake. The lake isn't moving so it has a still surface. Now imagine you are above that lake holding a rock. Big or small it doesn't matter. When you drop that rock it makes a tiny little ripple. That is the first event in time that was just changed. But then it keeps getting bigger and bigger until it hits the edges of the lake. Now an entire future changed.
When Marinette signed her name on the gift she caused Adrien to figure out her identity. This caused a chain of events which ended up with Chat Blanc destroying the world. When ladybug went back in time she fixed the future and changed it.
Bunnix's multiportal thing is kind of confusing. It's best described as a multiverse theory. What that means is that there is one main path and many other "Possibilities" When a change is made the path redirects itself and erases the other ones. When we saw Ladybug and Chat Noir in the sunset it was them. It just was a future them in a different universe. That universe was changed by Ladybug to fix everything. This means this path has been erased. The main path will never take that exact route again. This doesn't mean that LadyNoir won't happen though. It just means it won't happen that exact way.
